About the Recipe
This Spring Greens Salad is a vibrant and nutritious dish that celebrates seasonal freshness. Combining fluffy quinoa with tender spring greens, sweet sautéed onions and crunchy walnuts, it’s brought together with a light, zesty dressing for a delicious balance of flavour and texture. Perfect as a wholesome lunch, side dish or light dinner any day of the week.

Ingredients
3 tbsp Marry Berry’s Light Salad Dressing
100g quinoa
1 tbsp olive oil
1 red onion, sliced
150g spring greens, finely shredded
75g walnuts, roughly chopped
2 tbsp parsley, roughly chopped
Preparation
Step 1
Cook quinoa in boiling water for 20 minutes, drain & rinse under cold water.
Step 2
Heat olive oil in a pan, fry the onion for 5 minutes. Add spring greens & cook for another 4-5 minutes.
Step 3
Stir in walnuts, parsley & dressing. Toss with quinoa, season to taste & enjoy!

A great way to use up leftover cooked cabbage or greens!
