These Loaded Blue Cheese Jacket Potatoes are a deliciously indulgent twist on a classic favourite. The crispy potato skins are filled with creamy mashed potato mixed with rich blue cheese dressing, melted Cheddar, crunchy walnuts and fresh vegetables. Baked until golden and topped with a drizzle of dressing and chives, they’re a comforting, flavour-packed dish perfect for lunch, dinner or a hearty side.

Ingredients
3 tbsp Mary Berry’s Blue Cheese Dressing
2 large baking potatoes
15g butter
75g mature Cheddar cheese, grated
50g walnuts, chopped
1 stick celery, finely diced
50g cherry tomatoes, quartered
Chopped chives to garnish
Preparation
Step 1
Preheat the oven to 200°C (Gas Mark 6).
Step 2
Prick the potatoes with a fork and bake for 1 hour to 1 hour 15 minutes or until cooked through.
Step 3
Cut the potatoes in half and scoop out the flesh, leaving a 1cm border. Mash with butter, 1 tbsp dressing, and seasoning.
Step 4
Stir in the Cheddar, walnuts, celery, and tomatoes with 1 tbsp dressing. Spoon the mixture back into the potato shells.
Step 5
Return to the oven for 10 minutes, until golden and crispy.
Step 6
Drizzle with the remaining dressing and garnish with chives.
Cook's Tip!
These make an awesome BBQ side! Cook the potatoes in advance and just assemble and bake when needed. To speed up oven time, pop them in the microwave for 5 minutes first.
